Rice and Lentils

Ingredients

  • 1 onion
  • 2 Tbsp olive oil
  • 1/2 C brown rice
  • 1/2 C lentils
  • 2 C water
  • Salt and pepper to taste
  • 1/2 tsp cinnamon
  • 1/2 tsp crushed red pepper flakes (optional)

Directions

Mise en Place

  • Finely chop the onion.
  • Measure out the ingredients.

Prepare

  • Heat oil in a saucepan over medium heat.
  • Add onion and sauté until lightly browned.
  • Stir in rice and lentils.
  • Add water, salt, pepper, and cinnamon.
  • Stir and bring to a simmer. Cover and cook for 35 minutes.
  • Remove from heat and let stand, covered, for 10 minutes.
  • Fluff with a fork.

Serve

  • Serve and enjoy!
