Black Bean Mango Salsa

Ingredients

  • 5 oz. can black beans
  • 1 mango
  • 1 red bell pepper
  • 1/4 red onion
  • 2 Tbsp + ¼ C cilantro
  • 1/2 lime
  • Salt and pepper to taste

Directions

Mise en place

  • Wash and dry fresh produce.
  • Drain and rinse the black beans.
  • Peel the mango. Dice the mango, bell pepper, and red onion into a small dice. Mince the 2 Tbsp of cilantro.
  • Chop ¼ C of cilantro.
  • Slice a lime in half

Prepare

  • Place drained beans into a medium mixing bowl
  • Add freshly chopped ingredients to the black beans
  • Add ¼ C of cilantro to the top of the mixture
  • Squeeze the lime into the salsa.
  • Season with salt and pepper

Serve and enjoy!
