Ingredients
- 5 oz. can black beans
- 1 mango
- 1 red bell pepper
- 1/4 red onion
- 2 Tbsp + ¼ C cilantro
- 1/2 lime
- Salt and pepper to taste
Directions
Mise en place
- Wash and dry fresh produce.
- Drain and rinse the black beans.
- Peel the mango. Dice the mango, bell pepper, and red onion into a small dice. Mince the 2 Tbsp of cilantro.
- Chop ¼ C of cilantro.
- Slice a lime in half
Prepare
- Place drained beans into a medium mixing bowl
- Add freshly chopped ingredients to the black beans
- Add ¼ C of cilantro to the top of the mixture
- Squeeze the lime into the salsa.
- Season with salt and pepper
