Ingredients

  • 2 Tbsp olive oil
  • 1 C onion , chopped
  • 1 sweet potato
  • 2 tsp garlic , minced
  • 1 serrano pepper
  • 1 tsp fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 C light coconut milk
  • 3 C water
  • 8 C spinach

Directions

Mise En Place

  • Wash and dry the produce.
  • Chop the onions. Peel and dice the sweet potato. Mince the garlic, serrano, and thyme.
  • Measure out the ingredients.

Prepare the recipe

  • In a large sauté pan, heat the oil over medium-high heat. Add the onions and cook until fragrant. Add the sweet potato, garlic, peppers, thyme, salt, and pepper, and cook stirring for 30 seconds.
  • Add the coconut milk and the water. Cook, stirring, until the sweet potatoes are tender and the liquid is slightly reduced, about 10 minutes.
  • Add the greens, stir until wilted.
  • Remove from the heat and let it rest.

Serve

  • Serve warm and enjoy!
