Chickpea Kale Salad

Ingredients

  • 1 15oz. can chickpeas
  • 3-4 leaves kale
  • 2 T fresh parsley
  • 1 clove garlic
  • 1 lemon, juiced
  • 2T olive oil
  • salt and pepper to taste
  • 2 T parmesan cheese

Directions

Mise en Place

  • Drain and rinse chickpeas.
  • Wash and dry, kale and chop into strips
  • Wash and dry parsley and mince.
  • Mince garlic.
  • Cut lemon in half.
  • Measure olive oil and parmesan cheese.

Make Salad

  • In a bowl, combine chickpeas, kale, parsley, olive oil, and garlic.
  • Squeeze in lemon juice.
  • Add grated cheese and salt and pepper to taste.
  • Toss all ingredients together and mix well. Cover bowl and refrigerate.

Serve!

  • Best served at room temperature or chilled.
  • Garnish with grated cheese.
  • Serve and enjoy!
