If using whole spices: Combine all ingredients in the grinder, then pulse for 5 seconds at a time until all ingredients are ground up.
If using ground spices: Measure all ground ingredients into a bag or small Tupperware and shake to combine.
Use in the Chicken Saag. It is also good for marinades.
Chef’s Tip:
If using whole spices, substitute the following whole seeds for ground: 6 cardamom pods, 1 inch cinnamon stick, 3 whole cloves, 1/4 whole nutmeg. For remaining ingredients use the same amount of whole seed as ground.
