Garbanzo Red Pepper Salad

Ingredients

  • 1/2 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 tsp cumin
  • 1 tsp red wine vinegar
  • 1 ¾ cup prepared chickpeas*

*If prepared chickpeas are unavailable, canned chickpeas will work.

Directions

Mise en Place

  • Wash, dry, and dice the pepper and cucumber.
  • Measure out the cumin and vinegar.

Combine the Ingredients

  • In a large bowl, combine all of the ingredients. Toss the mixture.

Serve

  • Serve and enjoy!
