Meatballs on English Muffin

Ingredients

  • 3 cloves garlic , peeled and minced
  • 1 lb. lean ground beef, 90% lean, or ground turkey
  • 1 egg
  • 1 tsp dried parsley
  • 1/4 tsp pepper
  • 1 small onion
  • 14 oz. can crushed tomatoes
  • 2 whole wheat English muffins

Directions

Mise En Place

  • Preheat oven to 425°F.
  • Measure out all ingredients.
  • Finely chop onion.
  • Peel and mince garlic. Line baking tray with aluminum foil.

Prepare

  • In a medium pot, bring crushed tomatoes to a simmer. Cook pasta according to package directions.
  • In a medium bowl, mix the meatball ingredients together and shape into balls(about 24 meatballs).
  • Arrange meatballs on prepared baking sheet. Bake for 12-15 minutes or until cooked through (it should read 160°F for ground beef and 165°F for ground turkey). Add cooked meatballs to the warmed tomatoes.

Serve and enjoy!

  • Serve meatballs and sauce over English muffins.
