Mediterranean Zoodle Salad

Ingredients

  • 5 oz spinach
  • 2 zucchini
  • 1/4 cucumber
  • 10 cherry tomatoes
  • 1/4 C red onion
  • 2 oz feta cheese
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste

Directions

Mise en place

  • Wash and dry produce.
  • Chop the cucumber.
  • Cut the cherry tomatoes in half.
  • Thinly slice the red onion.
  • Crumble the feta cheese.
  • Cut zucchini into noodle-shaped strands using a spiralizing tool.
  • Measure out the ingredients.

Prepare

  • Place the spinach in a large bowl.
  • Place “zoodles” into the large bowl with the spinach and top with cucumber, tomatoes, red onion, and feta cheese.
  • Whisk (or shake in a jar) olive oil, lemon juice, oregano, salt, and pepper together until dressing is smooth; pour over “zoodle”mixture and toss to coat.
  • Allow flavors to marinate in the refrigerator for 10 to 15 minutes.

Serve and enjoy!
