Pineapple Strawberry Napoleons

Ingredients

  • 1 pint strawberries, sliced
  • 1.33 cups ricotta cheese, part-skim
  • 1 pineapple, thinly sliced

Directions

Mise en place

  • Wash and dry fruits.
  • Slice the strawberries, carefully removing the stems.
  • Measure out the ricotta cheese.

Cutting the pineapple

  • Using a large, very sharp knife, cut the top and bottom off the pineapple and place it upright on a cutting board. Slice off the outside of the pineapple, try to follow the curve of the pineapple.
  • Working from the outside in, slice 1/2 inch planks from the pineapple. Stop when you reach the core and then cut the opposite side of the pineapple. Slice the two remaining sides. Cut all planks so that they are approximately 4″ x 2″.

Assemble the Napoleon

  • Start with a slice of pineapple and spread 2 teaspoons of cheese on the pineapple slice and top with strawberries to cover. Repeat twice to make 3 layers, ending with the strawberries.
