Quick Pickled Red Onion

Ingredients

  • 1 red onion, sliced into thin strips
  • 3/4 cup hot water
  • 1 lemon, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Place onions in a bowl. Pour enough hot water to just cover over the onion, and let stand for 15 minutes.

Drain and rinse with cold water.

In a small bowl, combine the onion, lemon juice, salt, and pepper.

Cover and let stand at room temperature until the onion turn pink (about 10-15 minutes), stirring occasionally.

Serve and enjoy!
