Ingredients
- 1 15oz. can chickpeas
- 3-4 leaves kale
- 2 T fresh parsley
- 1 clove garlic
- 1 lemon, juiced
- 2T olive oil
- salt and pepper to taste
- 2 T parmesan cheese
Directions
Mise en Place
- Drain and rinse chickpeas.
- Wash and dry, kale and chop into strips
- Wash and dry parsley and mince.
- Mince garlic.
- Cut lemon in half.
- Measure olive oil and parmesan cheese.
Make Salad
- In a bowl, combine chickpeas, kale, parsley, olive oil, and garlic.
- Squeeze in lemon juice.
- Add grated cheese and salt and pepper to taste.
- Toss all ingredients together and mix well. Cover bowl and refrigerate.
Serve!
- Best served at room temperature or chilled.
- Garnish with grated cheese.
- Serve and enjoy!
