Ingredients
- 1/2 Onion
- 1 Carrot
- 1 Sweet potato
- 1 Clove garlic
- 1-14 oz. Can chickpeas
- 2 tsp Olive oil
- 1/2 tsp Cumin
- 1 3/4 C Water
- 1 C Brown rice
- 1 C Frozen mixed vegetables
- Salt and pepper to taste

Directions
Mise En Place
- Peel and chop the onion, carrot and sweet potato. Mince the garlic. Drain and rinse chickpeas.
Prepare
- Heat oil in a large skillet over medium heat.
- Add onion and cumin, and stir while cooking for 1 minute.
- Add remaining ingredients. Bring to a boil, cover, and reduce heat.
- Simmer for 35 minutes. Cover and let stand for 10 minutes. Serve hot.
Serve and enjoy!
- Serve as-is or with Baked Tofu.
