Indian Vegetable Skillet

Ingredients

  • 1/2 Onion
  • 1 Carrot
  • 1 Sweet potato
  • 1 Clove garlic
  • 1-14 oz. Can chickpeas
  • 2 tsp Olive oil
  • 1/2 tsp Cumin
  • 1 3/4 C Water
  • 1 C Brown rice
  • 1 C Frozen mixed vegetables
  • Salt and pepper to taste

Directions

Mise En Place

  • Peel and chop the onion, carrot and sweet potato. Mince the garlic. Drain and rinse chickpeas.

Prepare

  • Heat oil in a large skillet over medium heat.
  • Add onion and cumin, and stir while cooking for 1 minute.
  • Add remaining ingredients. Bring to a boil, cover, and reduce heat.
  • Simmer for 35 minutes. Cover and let stand for 10 minutes. Serve hot.

Serve and enjoy!

  • Serve as-is or with Baked Tofu.
