Ingredients

  • 1 T olive oil
  • 1 lb bag frozen onion and bell pepper mix*
  • 1 eggplant
  • 2 zucchinis
  • 1 pt. cherry tomatoes
  • 4 cloves garlic
  • 1/2 t dried oregano
  • 1/4 t ground coriander
  • Salt and pepper to taste

* If using fresh onion (1 cup) and peppers (1 cup) , slice into 1 inch strips.

Directions

Mise en Place

  • Peel and mince garlic
  • Cube eggplant and zucchini into 1” cubes
  • Halve cherry tomatoes
  • Measure spices and olive oil

Cook Onions & Peppers

  • Add olive oil to a large saute pan over medium heat.
  • Add the onion & peppers, cook, stirring, until soft and fragrant, onions are translucent.

Add Eggplant & Zucchini

  • Add cubed eggplant and zucchini stirring occasionally, until soft, about 15 minutes.

Add Tomatoes, Garlic, and Spices

  • Add tomatoes, minced garlic, oregano, and coriander, stirring until soft.

Season with salt and pepper to taste and serve!
